Say "I love you" with this delicious home-cooked dinner and dessert, a perfect pairing to share with your sweetheart on Valentine's Day.
Spicy Shrimp Pasta
Ingredients
1 lb. angel hair pasta
1 onion, chopped
1 red bell pepper, chopped
extra virgin olive oil
salt and pepper
1 lb. cooked and deveined frozen shrimp thawed per package directions
1 ½ teaspoons red pepper flakes (use less for mild)
1 cup chicken stock
2 cups fresh spinach
Instructions
Boil pasta to al dente (about five minutes). Meanwhile, in a big skillet over medium-high heat, sauté your chopped onion and bell pepper in a drizzle of olive oil with a pinch of salt and pepper. Cook about 5 minutes.
Next, add in your shrimp and red pepper flakes and cook about a minute. Pour in your chicken stock and deglaze the pan (scrape the little bits off the bottom). Reduce heat to low.
Drain pasta and add to skillet. Stir in fresh spinach and let it wilt down about a minute.
The angel hair pasta cooks up in minutes and the shrimp is already cooked, so all you're doing is heating it through.
